•1 Package of Chicken Enchilada Soup Mix
4 cups water, 2 cups milk or half’n’half
1 can (6 oz.) Tomato Paste
Whisk soup mix into water,
milk and tomato paste
1 (10 oz) can chicken or cooked chicken
Bring to boil, stirring often
Reduce heat and simmer for 10 minutes
Variations: 1/2 cup to 1 cup grated cheddar cheese
and 1/2 cup crushed tortilla chips. Top with Sour Cream.
Yield: About nine, one cup servings.
